Culinary portrait

Grilling meat over wood or charcoal is both a cooking method and an important social event in Zimbabwe.

Origins and cultural meaning

Zimbabwean cuisine is shaped by Shona and Ndebele traditions, southern African foodways, farming, pastoral practices and later colonial influences.

Flavour and texture

Maize, groundnuts, pumpkin and other leafy greens, beans, tomatoes and meat define many meals, while Sadza provides a mild base for richly flavoured sauces.

Kitchen knowledge

Sadza requires vigorous stirring and the right flour-to-water balance. Unsweetened peanut butter should be incorporated over low heat so sauces remain smooth and creamy.
