  • 2 kg rote Spitzpaprika
  • 1 small eggplant optional
  • 80 ml sunflower oil
  • 1 EL white wine vinegar
  • 1 TL salt
  • 1 small garlic clove optional

Preparation

  1. paprika and optional eggplant at very hoher Hitze on all sides dunkel toast.
  2. in a bowl covered 15 minutes steam leave, then peel and entkernen.
  3. Fruchtfleisch several hours in a Sieb drain.
  4. paprika coarsely zerkleinern or durch the Fleischwolf drehen.
  5. with oil at niedriger until mittlerer Hitze 45–60 minutes unter frequent stir reduce.
  6. with Essig and salt season to taste and hot serve or fachgerecht konservieren.
