Origins and cultural meaning

Somali cuisine reflects pastoral traditions, Indian Ocean and Red Sea trade, Islamic food culture and historical Arab, Persian, South Asian and Italian influences.

Flavour and texture

Cardamom, cinnamon, cumin, coriander, cloves and black pepper season rice, meat and tea, while goat, camel products, grains, pasta and bananas are recurring ingredients.

Kitchen knowledge

Rice should remain separate and aromatic, goat benefits from slow cooking, and fermented Canjeero batter needs enough time to develop its characteristic sourness and porous texture.
