Origins and cultural meaning

Angolan cuisine has deep African foundations shaped by regional Bantu traditions, the Atlantic coast and centuries of Portuguese colonial influence.

Flavour and texture

Red palm oil, garlic, onions, okra, leafy greens, groundnuts and chilli shape many dishes, while fish and seafood are central along the Atlantic coast.

Kitchen knowledge

Use palm oil with care for its strong flavour. Cassava leaves must be properly prepared and thoroughly cooked. Funge requires vigorous continuous stirring.
