How to prepare Oryx Stew

4–6 servings

Ingredients

  • 1 kg oryx or other lean game meat
  • 2 onions
  • 3 garlic cloves
  • 3 carrots
  • 400 g potatoes
  • 2 tomatoes
  • 700 ml stock

Preparation

  1. Cut the game into cubes and brown it strongly.
  2. Soften onions and garlic in the pan juices.
  3. Add tomatoes and stock and braise slowly.
  4. Add carrots and potatoes later in the cooking process.
  5. When the meat is tender, reduce the sauce and adjust seasoning.
