Ingredients

  • 700 g soaked stockfish or salt cod
  • 1 onion
  • 1 carrot
  • 1 celery stalk
  • 2 garlic cloves
  • 400 g tomatoes
  • 100 g black olives
  • 100 ml dry white wine
  • olive oil
  • bay leaf
  • thyme
  • parsley
  • black pepper

Preparation

  1. Soften onion, carrot and celery slowly in olive oil and add garlic briefly.
  2. Deglaze with white wine, add tomatoes, bay and thyme and simmer gently.
  3. Add the soaked fish and olives and braise over low heat until the fish is tender.
  4. Adjust seasoning carefully because the fish may remain salty.
  5. Finish with parsley and serve hot.
